Pineapple and Coconut Sorbet On A Stick


In this warm and sunny summer season, ice cream is a must. And may"I scream, you scream, we all scream for ice cream", as they all say, be true! These fruity delights are so enjoyable to eat, and they're the perfect life saver in any warm situation. The tropical flavour due to the sweet and delicious pineapple and wonderful, nourishing coconut water is something you won't get in any store or market, no matter how fancy it may be. The only way to get a bite of these lovely ones is to make them by hand! It has no added sugar, and it's natural all the way through! So take your time, but you'll see that it will definitely be worth when you take your first bite! 


PINEAPPLE AND COCONUT SORBET ON A STICK
Makes 12 sorbet sticks

1 pineapple
1 cup coconut water
24 raspberries, frozen or fresh
12 lolly moulds
12 straws or lolly sticks

Prepare the pineapple by cutting off the top and bottom, and slice off the shell. Cut the pineapple into cubes, and put it in the juicer and wait till you get a lovely, smooth pineapple juice. Pour the juice over into a jug and add the coconut water. Prepare 12 ice lolly moulds (which you can buy in any kitchenware store or online). Pour some juice in every mould, but make sure not to fill it all the way to the top because the liquid expands when it freezes. Add two raspberries in every mould and place them in the freezer for about an hour. Take the moulds out, place one straw or lolly stick in every mould and place them in the freezer again. Let them sit there overnight or for at least 6 hours. Take them out, and they're ready to enjoy!

Apple And Carrot Detoxing Juice

I've been planning to do a little detox fast for quite a while now, and I found this week as the perfect week to complete the fast. I haven't decided if It's going to be a one-day or three-day fast yet, but I'm just thinking of taking every day as it comes!

When detoxing, the main key is to drink a lot of water, and a lot of juice. I also find it more effective if I don't have any school or plans, because then I can sort of schedule up the day after how I'm feeling at the moment. This is the first time I've ever done a detoxing fast, so I'm really just in the staring phase of figuring out how it all works, and what works best for me. 

The most known fruit is, apple. Because as they say: "An apple a day keeps the doctor away." Apple juice is awesome when cleaning up the system. It helps flushing out the wastes, and especially if you have changed lifestyle, you should consider doing a detoxing cure. I really felt like I needed to refresh the system after changing my whole lifestyle, and get rid of the rests of unhealthy material and stuff that my body won't take up, out.


Press all of the ingredients through a juicer and you'll have this wonderful, fresh and detoxing juice which you can keep in the fridge for the whole day, and enjoy whenever you want it!

Raspberry Pecan Smoothie With Chia Pudding


This smoothie is just heaven! I really, really love it. The mix of crunchy bits of pecans, lovely sweet and sour raspberries and the refreshing jelly chia seeds in the bottom is just amazing. This must be my favourite breakfast when I´m getting a bit bored of oatmeal. It takes so little time to prepare, and you can actually make it in a jar and bring it with you to school or work and enjoy it in the rush.


RASPBERRY PECAN SMOOTHIE WITH CHIA PUDDING
Serves 1

4 tbsps chia seeds
6 tbsps water
1 handful pecans
1 handful raspberries, frozen or fresh
1 avocado
1 cup coconut water
4 tbsps oats

Mix together chia seeds and water in a glass and place it in the fridge overnight. Run the rest of the ingredients in a blender, pour the smoothie over the chia pudding and enjoy!

Detoxing Pineapple Strawberry Smoothie

For the moment, this little jug of fruity goodness is my must-have when I come home after a long and intense day at school in the period of final exams and tests. It can be hard sometimes having to deal with a lot of stress in the everyday, but trust me, this does the job and make you feel so many hundred times better! 

This amazing smoothie is high in dietary fiber, Vitamin C and manganese and is a great energy booster! It is lovely for detoxing and making the skin look fresher as well! It has a wonderful, creamy and fresh taste, and I really think you´ll love it!

Detoxing Pineapple Strawberry Smoothie
Serves one

10 strawberries, frozen or fresh
1/2 medium sized pineapple
1/2 banana
1 cup oat milk
1/2 cup coconut water
4 tbsps oats



The method for this delicious smoothie is easy peasy. Cut off the skin of the pineapple and cut it into smaller pieces. Put all of the ingredients in a blender for 30 seconds and serve in a nice glass!

The Ultimate Smoothie Bowl


When we talk about this bowl of pure deliciousness, I honestly don´t know where to start. The lovely creamy and rich flavour and texture of the smoothie together with some bits of silky soft oats is incredible! Like that isn´t enough, as well, the chia seeds makes it even more nutritious! This really is the ultimate bowl of goodness, and is perfect for breakfast or a little meal in between. 


The Ultimate Smoothie Bowl
Serves 1

1 banana
1 1/2 cup almond milk
1 cup frozen mango
1 tsp lucuma powder
4 tbsps rolled oats
1 tbsp chia seeds
1 tsp cinnamon

Simply combine all of the ingredients in a blender and blend. Once smooth, pour it over into a bowl and add whatever you´d like on top. Bananas, dried strawberries, chia seeds and oats are my favourites!

Lucuma Blackberry Smoothie Bowl

   
   
Smoothies are such a great invention! The idea of being able to blend together all sorts of fruits and berries and juices is great, because all sorts of nutrition is packed full in just one glass of smoothie. However, this variant with blackberries and lucuma powder is a great source to vitamins, minerals, anti-oxidants, dietary fibers, carotene which is necessary to process and product vitamin A and makes the eye see better as well as it keeps the skin young, B3 which have an intention to better the uptake of energy and also contains a lot of iron. This smoothie is amazing! 


Lucuma Blackberry Smoothie Bowl
Makes 1 bowl

1 handful frozen blackberries
1/2 banana
3 tsps lucuma powder
1 tsp cinnamon
1 cup pineapple juice (or other juice of own choice)
1/2 cup water
2 tbsps granola/oats/seeds
some dried berry slices
coconut chips

Add all of the six first ingredients into a blender and blend it until it´s all smooth and nice. Pour the smoothie into a bowl and sprinkle over granola/oats/seeds, have on some slices of dried berries and finally some coconut chips. Enjoy as a breakfast, lunch or even as a delicious dessert!

Tropical Antioxidant Smoothie


I am so in love with smoothies right now. It´s the best boost after an hour of exercise or after school or work. This smoothie is fantastic because it´s packed full with antioxidants, vitamin A, vitamin C, fiber and protein. As well, the wonderful taste of tropical fruits and summer, is the best thing in the world, even on a cold day!

Tropical Antioxidant Smoothie

1 small mango
1/2 cup pieces of watermelon, frozen
4 strawberries, frozen or fresh
1/2 cup gojiberries 
1 tbsp chia seeds
2 cups water
1 tsp cinnamon

Combine all of the ingredients in a blender. Serve with some slices of kiwi and strawberries. Enjoy!

Green Energy Detox Smoothie


This lovely green smoothie really does wonders. It contains loads and loads of iron, vitamin A and C, as well as a good amount of calcium, and healthy fat. It also helps lower the cholesterol. In other words, it´s perfect for breakfast or after any hard exercise. It has a wonderful, creamy consistency, and tastes fantastic too!


Green Energy Detox Smoothie
Makes 1 big portion

1 avocado
1/2 banana
1 small cup coconut water
1 small cup almond milk
the juice of 1/2 a lemon
2 cups spinach leafs
1 tsp chlorella
1 tsp spirulina
Have all of the ingredients into a blender and mix for approximately 30 seconds, until it´s all blended evenly. Enjoy!

Vegan Chia Seeds & Oat Pancakes


I love pancakes! It´s the perfect lunch or breakfast for a lazy day at home. These vegan oat pancakes taste so good, and keeps you full for hours. It´s rich in fibre, and with chia seeds you literally get everything you need for a day. Chia seeds contains a lot of protein, healthy fat, calcium, manganese and magnesium. 

Vegan Chia Seeds & Oat Pancakes
Makes 3 pancakes

2 tbsps chia seeds
1/2 small cup cold water
1 small cup almond milk/oat milk
1/2 small cup rolled oats
1 small cup oat flour
1 tsp baking soda
1 tsp vanilla extract
1 tsp coconut oil (for frying)

Start by letting the chia seeds soak in the water. Next step is to add the almond milk/oat milk, and the rolled oats. Stir while pouring in the flour a little at a time, before finally having in the baking soda and the vanilla extract. Heat a frying pan, and add the coconut oil. Let each of the pancakes cook for about 3 minutes on each side on medium heat. Serve with some sliced banana, almond butter and of course the beloved maple sirup -or topping of own choice! So simple, so delicious!
