Summer Salad With Herbal Oil


It's now fair to say that we're well into summer season, and nothing is better than to start the best season of the year with a rejuvenating bowl of fresh, wonderful tasting salad. I know many people don't see salads as much fun, but at least I do. And I hope you can see why! It's so enjoyable to literally throw all your favourite greens together and see how wonderful and colourful it turns out to be! Salad is like the palette of a painter, and it's always exciting how new colours and flavours will mix together in the end!


SUMMER SALAD WITH HERBAL OIL
Serves 1 hungry person

2 handfuls of your favourite salad leaf mix (I used baby leaf mix)
1 tomato
10 asparagus tips
1 handful almonds
1 avocado

Herbal Oil
some thyme stalks
1 handful basil leaves
1/2 cup extra virgin olive oil
the juice from 1/2 a lemon
1 pinch salt

Dressing
some balsamic

Heat a frying pan with some oil in it. Cut the asparaguses in half and place them on the heat for a total 2 minutes. As well you need to dice the tomato, and roughly chop the almonds. Slice the avocado into large slices, and add all the elements into one bowl. Toss. Add the ingredients for the herbal oil into a mixing bowl and run a hand mixer to make it all an even liquid. Pour it over the salad, and top it off by drizzling over some delicious, quality balsamic.
