Chia And Buckwheat Pizza


Chia And Buckwheat Pizza
Makes 2 portion pizza's

5 tbsp chia seeds
2 1/2 cups cold water
About 1 cup buckwheat flour
2 tsps honey (or maple sirup)
2 tsp gluten free soy sauce

Start off by letting the chia seeds soak in 2 cups of water for about 10 minutes until they've formed a jelly texture. At this point add the honey and the soy sauce, which will really give the pizza base a lovely and rich flavour, and pour the rest of the water into the mixture. Next add the buckwheat flour and give it a well stir. Now that the mixture is done, divide it into two even parts and pour into the middle of two baking trays. Since this isn't a regular pizza dough, the only way making this look like a pizza is spreading the mixture out into a circular form with a spoon or with your hands. Let the pizza base cook in the oven for about 20 minutes at 200C. 

For topping you can basically put on everything you like, but I like mashing up an avocado, roasting some slices of squash and red pepper, cutting some cherry tomatoes in half, putting on some different types of salad leafs such as spinach and rocket and of course sprinkling over some dried oregano. 

This is honestly the best pizza I've ever tried, and trust me you'll be surprised how something gluten, milk and yeast free can taste so heavenly!! This is a recipe you definitely should try out! Enjoy.
