Summer Salad With Herbal Oil

It's now fair to say that we're well into summer season, and nothing is better than to start the best season of the year with a rejuvenating bowl of fresh, wonderful tasting salad. I know many people don't see salads as much fun, but at least I do. And I hope you can see why! It's so enjoyable to literally throw all your favourite greens together and see how wonderful and colourful it turns out to be! Salad is like the palette of a painter, and it's always exciting how new colours and flavours will mix together in the end!

SUMMER SALAD WITH HERBAL OIL
Serves 1 hungry person

2 handfuls of your favourite salad leaf mix (I used baby leaf mix)
1 tomato
10 asparagus tips
1 handful almonds
1 avocado

Herbal Oil
some thyme stalks
1 handful basil leaves
1/2 cup extra virgin olive oil
the juice from 1/2 a lemon
1 pinch salt

Dressing
some balsamic

Heat a frying pan with some oil in it. Cut the asparaguses in half and place them on the heat for a total 2 minutes. As well you need to dice the tomato, and roughly chop the almonds. Slice the avocado into large slices, and add all the elements into one bowl. Toss. Add the ingredients for the herbal oil into a mixing bowl and run a hand mixer to make it all an even liquid. Pour it over the salad, and top it off by drizzling over some delicious, quality balsamic.

Sweet Fig And Red Cabbage Salad

Hi! I got to apologize for posting a bit less recipes in the last time. I have the exams this month, and need to prioritize that right now, and I really hope you understand. But, back on track, because more recipes are to come, so look ahead to see new photos and delicious recipes in the coming time!

Norway had it´s national day yesterday, which was 17´th of May, where we usually eat ALOT of good classic hot dogs and enjoy innumerable amounts of ice cream. This year was pretty different though. Me and my family made a delicious salad brunch and "healthier" cakes and desserts. This salad was a surprisingly big success! The combination of sweetness, bitterness and freshness was amazing. It´s super nutritious too!

Sweet Fig And Red Cabbage Salad
Serves 4

1/2 red cabbage
1 medium sized grape cluster
10 sugar peas
1 avocado
5 sweet figs
4 eggs
alpha sprouts

Rinse the red cabbage and slice it into thinner pieces. I like using a cheese slicer, because in that way the thickness of the cabbage is perfect. Place this in a mixing bowl, and add the grapes which already have been cut in half. Slice the sugar peas lengthwise, cut the avocado into cubes and cut the figs in four before adding it all to the bowl. Hard-boil the eggs - which will take about six minutes, and slice the eggs. Add the eggs into the salad and finally put on some alpha sprouts. Season with salt and a bit of pepper and enjoy!

Radish Salad

Radish must be the most wonderful vegetable ever! Radish is amazing to lower the cholesterol for whoever that´s struggling with high cholesterol levels, and is also rich in calsium, magnesium, vitamin C and has a lot of more benefits! I had some friends over for dinner, and they all fell in love with this fresh , slightly sweet and crunchy salad. If there is one new salad you should try, it must be this one!

Radish Salad
Makes 6 portions

10 radishes
1 cucumber
3 handfuls of salad leafs
1 yellow pepper
1 handful walnuts
1/2 handful cashewnuts
a small handful chives

Put the salad leafs in a large salad bowl, roughly slice up the yellow pepper, and then finely slice the cucumber and radish into super thin slices. Crush the nuts in your hands and chop the chives and have that on top!
